Ingredients
  

For The Lamb

  • 500 gram lamb leg steaks
  • 2 tbsp Lemon pepper seasoning
  • 2 tbsp Lemon
  • 1/2 cup Olive oil
  • 2 tsp Cider vinegar
  • 1 1/2 tbsp Green peppercorns crushed

For The Couscous Salad

  • 2 tbsp Olive oil
  • 1 tsp Salt
  • 1 cup Couscous
  • 2 tsp Butter
  • 1/4 cup Currants
  • 1 lemon zest grated
  • 1 yellow capsicum finely sliced
  • 2-3 handfuls of rocket Arugula
  • Parsley chopped

For The Dressing

  • 3 tbsp Lemon juice
  • 3 tbsp Olive oil
  • 1 tbsp Honey

Instructions
 

For the Leg of Lamb Steaks

  • In a sealable bag or lasagna-style dish, combine the lemon pepper seasoning, thyme, olive oil, cider vinegar and green peppercorns.
  • Step 2
  • Stir in the lamb steaks, cover and let marinate for 20 minutes. Alternatively, place the lamb steaks in the refrigerator overnight.
  • Step 3
  • In a non-stick pan, heat some oil and cook the steaks for about 3 – 4 minutes on each side. The steaks can also be cooked on a moderately hot barbecue plate.

  • Let it rest before serving with the couscous salad.

How To Make Couscous Salad

  • Step 1
  • Add the oil and salt to 1 cup of water in a small saucepan and bring to a boil.
  • Step 2
  • Add the couscous, turn off the heat, cover, and let sit for two minutes.
  • Step 3
  • Separate the couscous with a fork after you add the butter.
  • Step 4
  • Toss in the currants, yellow pepper, rocket or watercress, and chopped parsley.
  • Step 5
  • Toss the couscous with the dressing and shake it together in a screw-top jar before serving. Enjoy with lamb.
