For The Lamb

  • lamb leg steaks, 500g 
  • Lemon pepper seasoning, 2 tablespoon
  • Lemon, 2 tablespoons
  • Olive oil, ½ cup
  • Cider vinegar, 2 teaspoon
  • Green peppercorns (crushed), 1 1/2 tablespoon

For The Couscous Salad

  • Olive oil, 2 tablespoon
  • Salt, 1 teaspoon
  • Couscous, 1 cup 
  • Butter, 2 teaspoon
  • Currants, 1/4 cup
  • 1 lemon zest (grated) 
  • 1 yellow capsicum (finely sliced)
  • 2-3 handfuls of rocket (Arugula)
  • Parsley (chopped)

For The Dressing

  • Lemon juice, 3 tablespoon
  • Olive oil, 3 tablespoon
  • Honey, 1 tablespoon 

Instructions

Step 1

In a sealable bag or lasagna-style dish, combine the lemon pepper seasoning, thyme, olive oil, cider vinegar and green peppercorns.

Step 2

Stir in the lamb steaks, cover and let marinate for 20 minutes. Alternatively, place the lamb steaks in the refrigerator overnight.

Step 3

In a non-stick pan, heat some oil and cook the steaks for about 3 – 4 minutes on each side. The steaks can also be cooked on a moderately hot barbecue plate.

Step 4

Let it rest before serving with the couscous salad.

How To Make Couscous Salad

Step 1

Add the oil and salt to 1 cup of water in a small saucepan and bring to a boil.

Step 2

Add the couscous, turn off the heat, cover, and let sit for two minutes.

Step 3

Separate the couscous with a fork after you add the butter. 

Step 4

Toss in the currants, yellow pepper, rocket or watercress, and chopped parsley.

Step 5

Toss the couscous with the dressing and shake it together in a screw-top jar before serving. Enjoy with lamb.
