Barefoot Contessa Sirloin Tip Roast

Ingredients
  

  • 4-5 lb Sirloin tip roast 1 piece (4-5 lbs)
  • 2 tbsp Olive oil
  • 1 tsp Garlic powder
  • 1 tsp fresh cracked pepper
  • Salt
  • 1 tsp Dried rosemary
  • 1 onion

Instructions
 

  • Preheat the oven to 450°F. Let the roast come to room temperature at least 45-60 minutes before cooking.
  • Using olive oil and seasonings, rub roast. Put onion rings in the bottom of a dark pan and slice them into thick rings.
  • Place the roast on top of the onions. Roast for 15 minutes at 450°F. Roast for another 90 minutes at 300°F. Then reduce heat to 250°F.
  • When it’s almost done, remove it from the oven. It usually takes me about 142°F to remove mine and tent it lightly with foil. Wait at least 20 minutes before slicing. You can save drippings for gravy and soups or freeze them for later use.
