Step 1

Preheat the oven to 450°F. Let the roast come to room temperature at least 45-60 minutes before cooking.

Step 3

Place the roast on top of the onions. Roast for 15 minutes at 450°F. Roast for another 90 minutes at 300°F. Then reduce heat to 250°F.
