In a 4 quart heavy saucepan, heat milk, rice, sugar, butter, vanilla, and salt to a boil over moderate heat, then reduce heat and simmer about an hour, uncovered, stirring frequently, until rice is very tender.
In a bowl, whisk eggs lightly just before the rice mixture finishes cooking. Take the pan off the heat, add one cup of the rice mixture to the eggs, whisking constantly. Stir the egg mixture into the remaining rice mixture in the pan, then stir in the cream.
