Ingredients

  • 1 Whole garlic bulb
  • 1 Olive oil 1 teaspoon + 1 tablespoon
  • 1 Medium white onion chopped
  • 4 Medium potatoes peeled and quartered
  • 1/4 cup Butter softened
  • 1/4 cup Sour cream
  • 1/4 cup Parmesan cheese grated
  • 1/4 cup Milk 2%
  • 1/2 tsp Salt
  • 1/4 tsp Pepper

Instructions

  • Preheat the oven to 425 degrees. Peel the papery skin from the garlic bulb but do not separate or peel the cloves. Remove the top of the garlic bulb, which will reveal each clove. Apply 1 teaspoon of oil to each cut clove. Cover with foil. Bake for 30-35 minutes until soft.
  • In a large skillet, heat the remaining oil on low heat. Add the chopped onions and cook for 15-20 minutes, stirring occasionally, until golden brown. Remove from the stove and process in a food processor. Blend until smooth; set aside.
  • In a large saucepan, place potatoes and cover with water. Allow to boil. After the water has boiled, reduce the heat Cook uncovered for 15-20 minutes. Discard the water. Add butter, sour cream, cheese, milk, salt, pepper, and onion to potatoes with softened garlic. Mash until smooth.
  • Fill a freezer container with mashed potato mixture and freeze. Thaw partially in the refrigerator overnight before using. Cover the mixture and place in the Microwave on high heat, stirring twice and adding a little milk if required, until heated through.
