Dirty rice is one of the most popular dishes in the Philippines. It’s often made with rice, broth, meat, and sometimes fish. But dirty rice isn’t just a favorite dish in the Philippines. It’s also found in many other countries including the United Kingdom, USA, China, Korea, Indonesia, Thailand, Vietnam, and South Africa.
With a sharp knife, chop the onion and garlic cloves finely. Using a food processor, process the chicken livers and ground pork for five minutes. When done, it will look like a meat mixture.
Melt butter in a saucepan over low heat. In a frying pan, add the meat mixture and cook them for 10 minutes over medium-high heat or until their pinkish color changes to brown.
Cook your half-cooked meat mixture for another 5 minutes by adding old bay seasoning, oregano, salt, and black pepper.
Pour the dry mustard with minced garlic and onion in the meat mixture. Let them simmer for three minutes. Remove the pan from heat and place the meat mixture in a bowl.
Place the saucepan over high heat and pour in the whole chicken broth, the chopped bell pepper, and the uncooked long-grain rice.
After 10 minutes, the broth will start to boil. Reduce the heat to a simmer and cover the saucepan. Allow the rice to simmer for 20 minutes. It is important to stir the rice occasionally to prevent the rice from sticking.
Combine the rice and meat mixture in another saucepan and cook for about 5 min in a low heat. Pappadeaux Dirty Rice is ready.
