Ingredients

  • Long grain rice, 2 cups
  • Chicken broth , 4 cups
  • Chicken liver, 1/2 lb
  • Ground pork, 1/2 lb
  • Butter , 4 tbsp
  • Garlic, 4 cloves
  • Onions (diced) 1/4 cup
  • Dry mustard, 1/2 teaspoon
  • Old bay seasoning, 2 teaspoon
  • Oregano 1 teaspoon
  • Green bell pepper, 1/2 cup
  • 1 bay leaf
  • Salt (to taste)
  • Black pepper (to taste)

Instructions

Step 1

With a sharp knife, chop the onion and garlic cloves finely. Using a food processor, process the chicken livers and ground pork for five minutes. When done, it will look like a meat mixture. 

Step 2

Melt butter in a saucepan over low heat. In a frying pan, add the meat mixture and cook them for 10 minutes over medium-high heat or until their pinkish color changes to brown.

Step 3

Cook your half-cooked meat mixture for another 5 minutes by adding old bay seasoning, oregano, salt, and black pepper.

Step 4

Pour the dry mustard with minced garlic and onion in the meat mixture. Let them simmer for three minutes. Remove the pan from heat and place the meat mixture in a bowl.

Step 5

Place the saucepan over high heat and pour in the whole chicken broth, the chopped bell pepper, and the uncooked long-grain rice. 

Step 6

After 10 minutes, the broth will start to boil. Reduce the heat to a simmer and cover the saucepan. Allow the rice to simmer for 20 minutes. It is important to stir the rice occasionally to prevent the rice from sticking. 

Step 7

Combine the rice and meat mixture in another saucepan and cook for about 5 min in a low heat. Pappadeaux Dirty Rice is ready.
