Ingredients
  

  • 1 Fresh broccoli Large Head and the stalks
  • 1 Firm tofu Box
  • 4 large garlic cloves
  • 1 onion medium, chopped
  • 2 celery stalks

Instructions
 

  • Start by sautéing one medium onion and two stalks of celery. Cut them into small pieces and let them cook for a few minutes until the onions become translucent. The aroma of sautéed onions and celery will create a flavorful base for our soup.
  • While the onions and celery are sautéing, chop your broccoli into bite-sized pieces. Remember, the smaller the pieces, the faster they will cook.

Now, let’s prepare the tofu.

  • Cut the tofu into cubes and sear or fry them on all sides until they are golden brown. This will give the tofu a nice texture and enhance its flavor. Scroll up to learn more about this step if you need.
  • Once the onions are translucent, add in the chopped broccoli, seared tofu, and garlic cloves. Let them cook together so that the flavors can meld together. The garlic will give the soup a nice kick, and the tofu will absorb the flavors of the other ingredients.
  • After the ingredients have been sautéed together, add in your choice of broth. Vegetable broth works great in this recipe and keeps it vegetarian and vegan-friendly. Let the soup simmer until the broccoli is tender.

Blending Time!

  • Once the broccoli is tender, use an immersion blender to blend the soup until it’s smooth and creamy. If you don’t have an immersion blender, a regular blender works just fine. Just make sure to let the soup cool a bit before blending it to avoid any blender mishaps.
  • After the soup is blended, let it continue to simmer for a few more minutes. This is the perfect time to taste the soup and adjust the seasonings. Add salt, pepper, or any other favorite spices to make this soup your own.

Serve

  • Serve the soup hot with a sprinkle of your favorite cheese or a dollop of sour cream. Or, if you’re keeping it vegan, some crispy croutons or a sprinkle of nutritional yeast are delicious toppings as well.
