Chinese Fried Ice Cream

Chinese cuisine is not complete without fried ice cream. A dessert that is loved by both adults and children around the world thanks to its crisp batter encasing a cold ice cream center. There is a combination of warm outside and cold inside that will leave you speechless. Fried ice cream can easily be prepared at home even if the process is quite lengthy.

Ingredients
  

  • 1 Madeira cake
  • 4 scoops Vanilla ice cream
  • 2 Eggs large
  • 1 cup Dry breadcrumbs
  • 2 cup Canola oil

For caramel sauce:

  • 2/3 cup Cream
  • 3/4 cup Brown sugar
  • 3 tsp Butter
  • 1 tsp Vanilla extract

Instructions
 

  • Let’s begin by making the caramel sauce. For this, I recommend using a glass bowl. In a large bowl, combine 2/3 cup of cream, 3 tsp of butter, ¾ cup of brown sugar, and 1 tsp of vanilla extract.
  • Pour the mixture into a medium-sized saucepan, and heat it over medium heat. Continue stirring for 5 to 7 minutes until all the sugar has dissolved.
  • After it comes to a boil, reduce the heat and simmer for 5 minutes. Remove the sauce from the heat when it thickens and set it aside.
  • For frying, cut the Madeira cake into 8 slices. Place a piece of cake in your hand and top with ice cream.
  • Using your hands, shape the cake into a ball around the ice cream after placing the second slice of cake on top.
  • Without wasting any time, place it on a shallow plate and place it in the freezer to chill. Freeze the ice cream balls for 2 hours or more.
  • Beat the eggs in another shallow bowl. Spread bread crumbs on a plate. Take the balls out of the freezer and roll them in the whisked egg, then put them back in the freezer.
  • Let them stand for 5 minutes after removing them from the fridge. Turn on the heat to high and pour oil into a medium saucepan.
  • Add two balls at a time to the hot oil and cook for 1 minute until golden. Using a paper towel, absorb any remaining oil. Drizzle the caramel sauce over the dish for garnish and taste.
