Ingredients

  • Madeira cake, 1
  • Vanilla ice cream, 4 scoops
  • Eggs (large), 2
  • Dry breadcrumbs, 1 cup
  • Canola oil, 2 cups

For caramel sauce:

  • Cream, 2/3 cup
  • Brown sugar, ¾ cup
  • Butter, 3 teaspoons
  • Vanilla extract, 1 teaspoon

Instructions

Step 1

Let’s begin by making the caramel sauce. For this, I recommend using a glass bowl. In a large bowl, combine 2/3 cup of cream, 3 tsp of butter, ¾ cup of brown sugar, and 1 tsp of vanilla extract. 

Step 2

Pour the mixture into a medium-sized saucepan, and heat it over medium heat. Continue stirring for 5 to 7 minutes until all the sugar has dissolved. 

Step 3

After it comes to a boil, reduce the heat and simmer for 5 minutes. Remove the sauce from the heat when it thickens and set it aside. 

Step 4

For frying, cut the Madeira cake into 8 slices. Place a piece of cake in your hand and top with ice cream.

Step 5

Using your hands, shape the cake into a ball around the ice cream after placing the second slice of cake on top.

Step 6

Without wasting any time, place it on a shallow plate and place it in the freezer to chill. Freeze the ice cream balls for 2 hours or more.

Step 7

Beat the eggs in another shallow bowl. Spread bread crumbs on a plate. Take the balls out of the freezer and roll them in the whisked egg, then put them back in the freezer.

Step 8

Let them stand for 5 minutes after removing them from the fridge. Turn on the heat to high and pour oil into a medium saucepan.

Step 9

Add two balls at a time to the hot oil and cook for 1 minute until golden. Using a paper towel, absorb any remaining oil. Drizzle the caramel sauce over the dish for garnish and taste.
