There is a combination of warm outside and cold inside that will leave you speechless. Fried ice cream can easily be prepared at home even if the process is quite lengthy. 

This is a type of ice cream ball, which is very small and frozen at a very low temperature. In order to deep-fry these, they are coated in Madeira cake, breadcrumbs. It acts as an insulator, preventing ice cream from melting inside.

How To Make Chinese Fried Ice Cream

In Chinese cuisine, fried ice cream is one of the most traditional dishes. With its crunchy and deep-fried ice cream batter, it has become a global favorite, loved by adults and kids alike. After collecting all the following ingredients, let’s start making a yummy Chinese fried ice cream recipe.


  • Madeira cake, 1
  • Vanilla ice cream, 4 scoops
  • Eggs (large), 2
  • Dry breadcrumbs, 1 cup
  • Canola oil, 2 cups

For caramel sauce:

  • Cream, 2/3 cup
  • Brown sugar, ¾ cup
  • Butter, 3 teaspoons
  • Vanilla extract, 1 teaspoon


Step 1

Let’s begin by making the caramel sauce. For this, I recommend using a glass bowl. In a large bowl, combine 2/3 cup of cream, 3 tsp of butter, ¾ cup of brown sugar, and 1 tsp of vanilla extract. 

Step 2

Pour the mixture into a medium-sized saucepan, and heat it over medium heat. Continue stirring for 5 to 7 minutes until all the sugar has dissolved. 

Step 3

After it comes to a boil, reduce the heat and simmer for 5 minutes. Remove the sauce from the heat when it thickens and set it aside. 

Step 4

For frying, cut the Madeira cake into 8 slices. Place a piece of cake in your hand and top with ice cream.

Step 5

Using your hands, shape the cake into a ball around the ice cream after placing the second slice of cake on top.

Step 6

Without wasting any time, place it on a shallow plate and place it in the freezer to chill. Freeze the ice cream balls for 2 hours or more.

Step 7

Beat the eggs in another shallow bowl. Spread bread crumbs on a plate. Take the balls out of the freezer and roll them in the whisked egg, then put them back in the freezer.

Step 8

Let them stand for 5 minutes after removing them from the fridge. Turn on the heat to high and pour oil into a medium saucepan.

Step 9

Add two balls at a time to the hot oil and cook for 1 minute until golden. Using a paper towel, absorb any remaining oil. Drizzle the caramel sauce over the dish for garnish and taste.
