1/4cupcooked turkey sausage or turkey bacon, crumbled
1/4cupblack beans, drained and rinsed
1/4cupshredded cheddar or pepper jack cheese
2tbspsalsa or pico de gallo
1tbspunsalted butter

1large (10-inch)flour tortillawarmed

Instructions
Crack eggs into a bowl. Add Greek yogurt, salt, and pepper. Whisk until completely combined and the yogurt is fully incorporated.
Warm the tortilla in a dry skillet for 30 seconds per side or in the microwave for 20 seconds. Set aside.
Melt butter in a non-stick skillet over low to medium-low heat. Pour in the egg mixture.
Cook eggs low and slow, gently folding with a rubber spatula every few seconds. Remove from heat just before fully set — they will continue cooking from residual heat. The Greek yogurt keeps them extra creamy.
Place scrambled eggs in the center of the warm tortilla. Top with turkey sausage, black beans, cheese, salsa, and avocado if using.
Fold the sides of the tortilla inward, then roll tightly from the bottom up. Slice in half if desired and serve immediately with hot sauce.
