High Protein Scrambled Egg Breakfast Burrito

Ingredients
  

  • 3 large eggs
  • 2 tbsp plain Greek yogurt (2% or whole)
  • 1/4 cup cooked turkey sausage or turkey bacon, crumbled
  • 1/4 cup black beans, drained and rinsed
  • 1/4 cup shredded cheddar or pepper jack cheese
  • 2 tbsp salsa or pico de gallo
  • 1 tbsp unsalted butter
  • 1/4 tsp salt
  • 1/4 tsp black pepper
  • 1 large (10-inch) flour tortilla warmed
  • 1/4 avocado, sliced optional
  • 2 tbsp hot sauce optional

Instructions
 

  • Crack eggs into a bowl. Add Greek yogurt, salt, and pepper. Whisk until completely combined and the yogurt is fully incorporated.
  • Warm the tortilla in a dry skillet for 30 seconds per side or in the microwave for 20 seconds. Set aside.
  • Melt butter in a non-stick skillet over low to medium-low heat. Pour in the egg mixture.
  • Cook eggs low and slow, gently folding with a rubber spatula every few seconds. Remove from heat just before fully set — they will continue cooking from residual heat. The Greek yogurt keeps them extra creamy.
  • Place scrambled eggs in the center of the warm tortilla. Top with turkey sausage, black beans, cheese, salsa, and avocado if using.
  • Fold the sides of the tortilla inward, then roll tightly from the bottom up. Slice in half if desired and serve immediately with hot sauce.
