- 225 g Self-rising flour
- 2 teaspoon Baking powder
- 100 g Butter (softened)
- 50 g Granulated sugar
- 100 g Dried fruit (Mixed)
- 50 g Currants
- 1 Large egg
- 1 tablespoon Milk
- Demerara sugar (for topping)
Preheat the oven to 180C.
Grease trays or use baking paper.
Combine flour and baking powder.
Blend butter into the mixture.
Integrate dried fruit and sugar.
Whisk egg into milk. Incorporate milk mix.
Shape mixture into balls. Hand or spoon shaping.
Sprinkle demerara sugar. Bake for about 15 minutes for golden, firm cakes.
- Use self-rising flour for a great rise.
- Slowly put in the fruits for mixing.
- Don't mix too much; it can make them hard.
