Ingredients
  

  • 225 g Self-rising flour
  • 2 teaspoon Baking powder
  • 100 g Butter (softened)
  • 50 g Granulated sugar
  • 100 g Dried fruit (Mixed)
  • 50 g Currants
  • Large egg
  • 1 tablespoon Milk
  • Demerara sugar (for topping)

Instructions
 

  • Preheat the oven to 180C.
  • Grease trays or use baking paper.
  • Combine flour and baking powder.
  • Blend butter into the mixture.
  • Integrate dried fruit and sugar.
  • Whisk egg into milk. Incorporate milk mix.
  • Shape mixture into balls. Hand or spoon shaping.
  • Sprinkle demerara sugar. Bake for about 15 minutes for golden, firm cakes.

Notes

  • Use self-rising flour for a great rise.
  • Slowly put in the fruits for mixing.
  • Don't mix too much; it can make them hard.
