Perkins Potato Pancakes

Perkins potato pancakes are one of the easiest pancakes to make and you can add a variety of toppings along with the pancakes. This high-protein pancake is a great meal that should be made quite often in your household. Perkins potato pancakes are delicious and easy to make. they are made using homemade batter and are perfectly delicious even for kids. They are ideal for breakfast but are very easy to prepare.

Ingredients
  

  • 1 cup All-purpose flour
  • 1 cup Whole milk
  • 4 Eggs
  • 3 tsp Butter melted
  • 3 tsp Sugar
  • 1/4 tsp Baking powder
  • 1/2 tsp Salt
  • 1 tsp Fresh parsley chopped
  • 1 tbsp Onion minced
  • 2 1/2 cups Frozen hash browns 2 1/2 cups OR Fresh Potatoes (shredded), 4

Instructions
 

  • In a large mixing bowl, combine all of the ingredients, except the potatoes. Using a hand mixer or electric mixer, beat the mixture until smooth.
  • Stir the potatoes into the batter and mix until the potatoes are mixed well. While you pre-heat the griddle or skillet, let the batter rest. Grease the pan with butter.
  • Pour 1/4 cup of batter into the pan. Cook as many as will comfortably fit in your pan at one time. Cook pancakes for about 2 minutes per side until brown. Spread butter on top of the stack and serve.
