  • All-purpose flour, 1 cup
  • Whole milk, 1 cup
  • Eggs, 4
  • Butter (melted), 3 tsp
  • Sugar, 3 tsp
  • Baking powder, 1/4 tsp
  • Salt, 1/2 tsp
  • Fresh parsley (chopped), 1 tsp
  • Onion (minced), 1 tablespoon
  • Frozen hash browns, 2 1/2 cups OR Fresh Potatoes (shredded), 4

Instructions

Step 1

In a large mixing bowl, combine all of the ingredients, except the potatoes. Using a hand mixer or electric mixer, beat the mixture until smooth.

Step 2

Stir the potatoes into the batter and mix until the potatoes are mixed well. While you pre-heat the griddle or skillet, let the batter rest. Grease the pan with butter.

Step 3

Pour 1/4 cup of batter into the pan. Cook as many as will comfortably fit in your pan at one time. Cook pancakes for about 2 minutes per side until brown. Spread butter on top of the stack and serve.
