- chicken breasts (boneless and skinless), 3
- 1 Red bell pepper (sliced)
- Extra-virgin olive oil (divided), 2 tablespoons
- 1 Orange bell pepper (sliced)
- Onion (diced), 1 cup
- 1 jalapeno (seeded and minced)
- 1/3 cup sliced green onions,
- 3 garlic cloves (minced)
- Chicken broth (low-sodium), 1/2 cup
- Heavy cream or half and half, 3/4 cup
- Kosher salt, 1/2 teaspoon
- Parmesan (Freshly grated), 1/2 cup
- Jerk seasoning (divided), 3 tablespoons
- Parsley (chopped), 1/4 cup
Prepare your chicken breasts by seasoning them on both sides with 2 tablespoons of jerk seasoning, then cover and refrigerate for 1 hour or up to 8 hours.
Preheat the oven to 400 degrees Fahrenheit. Pour one tablespoon olive oil in a large skillet over medium heat. Add the chicken and let it cook until brown, 2 to 3 minutes. Cook the chicken on the other side for 3 more minutes.
