Ingredients

  • Penne pasta, 1 pound 
  • chicken breasts (boneless and skinless), 3 
  • 1 Red bell pepper (sliced)
  • Extra-virgin olive oil (divided), 2 tablespoons
  • 1 Orange bell pepper (sliced) 
  • Onion (diced), 1 cup
  • 1 jalapeno (seeded and minced)
  • 1/3 cup sliced green onions,
  • 3 garlic cloves (minced)
  • Chicken broth (low-sodium), 1/2 cup
  • Heavy cream or half and half, 3/4 cup
  • Kosher salt, 1/2 teaspoon
  • Parmesan (Freshly grated), 1/2 cup
  • Jerk seasoning (divided), 3 tablespoons
  • Parsley (chopped), 1/4 cup 

Instructions

Step 1

Prepare your chicken breasts by seasoning them on both sides with 2 tablespoons of jerk seasoning, then cover and refrigerate for 1 hour or up to 8 hours.

Step 2

Preheat the oven to 400 degrees Fahrenheit. Pour one tablespoon olive oil in a large skillet over medium heat. Add the chicken and let it cook until brown, 2 to 3 minutes. Cook the chicken on the other side for 3 more minutes.

Step 3

Place the skillet in the oven and roast the chicken until it reaches an internal temperature of 165 degrees F, about 25 to 30 minutes.

Step 4

Cook the pasta in salted water until it is al dente. It will take approximately 7 to 8 minutes to cook. When done drain and set aside.

Step 5

Remove the chicken from the oven and place it on a platter. Cover it with a dish towel to keep it warm.

Step 6

Add the remaining olive oil to the skillet and saute the red bell peppers, orange bell peppers and onions for 4 minutes or until softened.

Step 7

Add both the jalapeno and green onions and stir for 2 minutes. Incorporate the chicken broth into the pan and heat to boiling.

Step 8

Reduce the heat to low, stir in the heavy cream, salt, and parmesan, then fold in the pasta.

Step 9

Slice the chicken and serve over the pasta and garnish with parsley and green onions if desired.
