  • Cabbage (finely chopped), 1 head 
  • Granulated sugar, 1/3 cup
  • Freshly ground black pepper, 1/8 teaspoon
  • Mayonnaise, 1/2 cup 
  • white onion (finely minced), 2 tablespoon
  • Buttermilk, 1/4 cup
  • Lemon juice, 2 1/2 teaspoon
  • Kosher salt, 1/2 teaspoon
  • Whole milk, 1/4 cup
  • Apple cider vinegar, 1 1/2 tablespoon
  • Carrot (finely shredded), 1/4 cup

Instructions

Step 1

Prepare the vegetables by chopping them into fine pieces, about the size of a rice kernel. A greater can be used for the carrot. A sharp knife can also be used for the cabbage. Finely cut vegetables infuse the best flavour. Alternatively, you can make them thicker if you wish. 

Step 2

In a medium mixing bowl, combine granulated sugar, cider vinegar, freshly ground black pepper, Kosher salt, whole milk, buttermilk, mayo, and lemon juice. Combine all ingredients with a whisk, and beat until smooth. 

Step 3

Add the finely chopped cabbage, carrots, and white onion. Mix well to finely coat with the recipe for John’s slaw dressing.

Step 4

Before serving, cover the bowl with plastic wrap and place it in the refrigerator for at least 24 hours.
