For The Simple Syrup:
- Granulated sugar, 1/2 cup
- Water, 1/2 cup
- Kosher salt, 1 pinch
For The Coconut Mojito:
- Simple syrup, 1 oz
- White rum, 1-1/2 oz
- Full-fat canned coconut milk, 1 oz
- Fresh lime juice, 1 oz
- Club soda (for serving)
- 8 mint leaves (for serving)
- Ice
Instructions
For The Simple Syrup:
Step 1
Stir the sugar and water together in a small saucepan over medium-high heat until the sugar dissolves.
Step 2
Take off the heat, cool, and place in an airtight container.
For The Coconut Mojito:
Step 1
Muddle the mint leaves and simple syrup in a cocktail shaker.
Step 2
Pour rum, coconut milk, lime juice, and ice into a shaker halfway full of ice.
Step 3
Cover the drink and shake it for 20 to 30 seconds to get the drink very cold.
Step 4
Place ice into a tall glass and strain the cocktail into it. Garnish with club soda and mint leaves.
