Slice the butter into cubes of 1/4 inch and chill. Combine butter, flour, and salt in a food processor bowl and pulse for 15 to 20 seconds until the mixture resembles coarse sand with chunks of butter.

Put the dough mixture on the work surface and combine it with your hands. Separate the dough into two parts, roll into balls, and flatten into disks 4 inches in diameter. Wrap them in plastic wrap or place them in a baggie and place them in the refrigerator for one hour.

Step 4

Remove the dough from the refrigerator and let it rest for a few minutes before rolling it out. Make sure the work surface and rolling pin are floured well before rolling out the dough.

Step 5

Roll out the dough disks until they are four inches larger than the pie pan. After rolling out the crust, let it rest for five minutes.

Step 6

Place the crust carefully in the pie pan and proceed with the recipe for the filling of your choice. Cover the pie with a second crust and bake as instructed.
