  • All-purpose flour, 1 3/4 cups
  • Ripe bananas (mashed) , 4 
  • Unsalted butter (melted), 1/2 cup
  • Toasted pecans (chopped), 1 cup
  • Granulated sugar, 1/2 cup
  • Baking soda, 1 teaspoon
  • Ground cinnamon, 1 teaspoon
  • Fine salt, 1/2 teaspoon
  • Nutmeg (Freshly grated), 1/4 teaspoon
  • 2 large eggs (lightly beaten)
  • Buttermilk, sour cream or yogurt, 1/4 cup
  • Light brown sugar, 1/2 cup 
  • Pure vanilla extract, 1 teaspoon

Instructions

Step 1

Pre-heat the oven to 350 degrees Fahrenheit. Prepare a 9×5 inch loaf pan by greasing it gently with butter.

Step 2

In a large bowl, combine the flour, sugar, baking soda, cinnamon, pecans, salt, and nutmeg.

Step 3

Mix eggs, buttermilk, brown sugar, vanilla extract and buttermilk in another bowl. Combine the bananas with the mixture.

Step 4

Add the banana mixture to the flour mixture and mix until combined. It is okay to leave some lumps in the mixture; do not overmix.
