Snoop Dogg Fried Chicken is a mouth-watering, crunchy fried chicken dish that you can make at home. Just follow these steps to make this increasingly popular and easy-to-prepare dish.
- 1/3rd cup sugar
- 1/3rd cup kosher salt
- 1 bay leaf
- One teaspoon red pepper flakes
- One orange peel
- Four pounds of chicken wings
- Two cups of flour.
- 1/4th cup cornmeal
- 1/4th cup crushed potato chips
- Two teaspoons garlic powder
- One teaspoon cayenne
- Half a teaspoon of baking powder
- Two teaspoons of black pepper
- Two teaspoons salt
- Two cups buttermilk
- One quart canola oil
Pour 5 cups of water into a large pot. Bring the pot to a boil over high heat. Add the sugar, red pepper flakes, salt, bay leaf, and orange peel. Stir for about a minute, until the sugar and salt are dissolved.
Take off the heat and let cool. Put the chicken in a bowl and cover it with brine. Refrigerate for 10 to 12 hours, and for up to 24 hours.
Pat the chicken dry with a paper towel after removing it from the brine. Discard the brine and set the chicken aside.
In a large bowl, stir together the cornmeal, flour, garlic powder, crushed potato chips, cayenne, black pepper, baking powder, and salt until combined. Put into a shallow dish. Add the buttermilk to another large shallow dish next to the flour mixture. In front of the two dishes, put a wire rack or pan where you will place the battered chicken.
Put one wing in the buttermilk and let it soak for a while. Lift and pour back any excess into the dish. Then roll the wings in the flour mixture, coating them completely. Repeat with the remaining wings. On the wire rack or pan, arrange the battered chicken wings. Before frying, let the wings dry for 20 to 30 minutes.
Heat the canola oil to 350°F in a large Dutch oven. A wire rack can be placed over a plate or a pan can be lined with brown paper.
Add the chicken wings to the hot oil in batches, making sure not to crowd them or they will become greasy. After you add the chicken, the oil’s temperature will drop from 300°F to 320°F. Maintain a consistent 350°F temperature by monitoring the heat.
You should fry the wings for about 8 to 10 minutes until they are golden brown. Lower the heat if the chicken is getting too dark. After the chicken is done, remove each piece with tongs and place it on the rack or pan to drain. Serve with salt generously sprinkled on top.
Repeat the process with the remaining chicken. Bring the oil back up to temperature before adding the next batch.
