- All-purpose flour, 2 cups
- Dark chocolate wafers, 16 ounces
- Unsalted butter, 1 cup
- Powdered sugar, 3/4 cup
- Vanilla, 1 tablespoon
- Baking powder, 1 teaspoon
- Edible gold dusting powder
For The Royal icing:
- Egg whites (pasteurized), 3 ounces
- Vanilla extract, 1 teaspoon
- Confectioners’ sugar, 4 cups
Combine butter and powdered sugar in a mixing bowl and mix until fluffy and light. Add vanilla extract and mix again.
Add flour and baking powder and mix slowly until the mixture is well combined.
Roll the mixture into a ball, wrap it with plastic wrap, and keep it in the refrigerator for about 30 minutes.
For The Chocolate toppers And Royal Icing:
In the microwave, melt the chocolate. Transfer to a zip-top bag and seal.
On a cookie sheet, place the molds and carefully fill them with chocolate.
Then freeze them for five to seven minutes until they can be popped out. Follow the same procedure for 24 to 30 toppers.
In a bowl, squeeze extra chocolate.
Cut And Bake Cookies:
Pre-heat the oven to 350 degrees Fahrenheit. Roll out the cookie dough on a floured surface, then cut it into snowman shapes.
Place the cookies on a cookie sheet. Bake for 10 to 12 minutes. When done, remove from the oven.
For The Royal icing:
Beat the egg whites and vanilla together until frothy. Gradually add sugar, mixing at a low speed until the mixture is shiny and combined.
Beat the mixture on high speed for 7 to 8 minutes until stiff, glossy peaks form. Fill a pastry bag with the icing.
Decorate The Cookies:
You can use the extra chocolate as a binding for chocolate toppers by reheating it. Put the melted chocolate on the back of the chocolate topper and place it on the cookie.
Add royal icing to the cookie. Top each piece of chocolate with chocolate dusting powder. Leave the cookies to cool before serving. Enjoy!
