My daughter is a vegetarian, so I couldn’t make her any of my vegetarian recipes, but I decided to try to make her a vegetarian soup.

Ingredients
- Celery (diced), 1 Cup
- Butter, ½ tablespoon
- Lentils, (washed and drained), ½ cup
- Garlic cloves (minced), 2
- Ginger (minced), ½ tablespoon
- Vegetable stock, 5 cups
- Tomato paste, 1 tablespoon
- Frozen spinach (chopped), 1 cup
- Ground black pepper
- salt
- coriander leaves (chopped), ½ cup (optional)
Instructions
Step 1
Melt the butter in a large pot over low heat. Pour in the celery and stir. We need to soften it a bit. Check if the celery has gotten softer by poking it with the handle.
Step 2
As soon as the celery has softened, turn the heat to low and pour in the vegetable stock. Then keep adding garlic, ginger, black pepper, and salt while it simmers. Stir continuously so that the aroma will release.
Step 3
Add in the lentils and cook for about 2-4 minutes. Continue stirring. Add the chopped spinach and tomato paste. Cook and stir for a few minutes. Ensure it simmers and cooks. Cook it for about an hour and make sure not to cover the lid during the cooking process.
Step 4
Add freshly chopped coriander leaves once the stew has thickened. Turn off the stove. Using a stick blender, make a smooth puree. You can serve this dish with bread.
