Immediately transfer into cold water to stop further cooking and shock, then remove skin but leave enough for an easy peeler or grater on hand so that handling is all intact when moving over your fine strainers later. Peel with salt if desired before quartering lengthwise; I like keeping mine whole–it’s easier than trying to cut out lumps! Place each piece in it’s own shallow dish/casserole dish if making individual servings: place margarine patts (2 per layer)and brown sugar mixture atop entire stack again as well – bake at 375.

  • Margarine, 1 stick 
  • Brown sugar, 2 cups 
  • Mini Marshmallows, 1 bag 

Instructions

Step 1

Prepare potatoes by boiling them until a sharp knife can go through the middle. As soon as you can, place in cold water.

Step 2

Let cool completely in a strainer. Remove the skins and quarters of potatoes, and put them in a pan.

Step 3

Place the margarine in a pan with the brown sugar and cut into pats. Bake at 375 for about 45 minutes. Remove from the oven at 35 minutes and add the marshmallows on top.
