  • Rockfish filet, 2 pounds
  • Vegetable oil, 3 tablespoon
  • Lemon juice, 1 tablespoon
  • Butter, 4 tablespoon
  • Garlic clove, 4 
  • Fresh Basil (chopped), 2 tablespoon
  • Cayenne pepper, 1 dash


Step 1

Before grilling the fish, marinate it for at least 30 minutes in the oil and lemon juice. Grill for ten to fifteen minutes, turning just once. The time will depend on the thickness of your fish. 

Step 2

Stew the garlic in butter for 3 minutes, stirring constantly to prevent it from browning. Season with cayenne and basil and remove from heat.

Step 3

Garlic butter can be spread over the fish or served separately in a gravy boat.
