Ingredients

For The Cookies

  • All purpose flour, 3 cups
  • Baking soda, 1/2 teaspoon
  • Baking powder, 1 teaspoon
  • Unsalted butter (softened), 1 cup
  • White or palm sugar, 1 cup
  • Juiced lemon (with pulp and grated peel), 2 lg

For The Glaze

  • Confectioners sugar, 1 1/4 cup
  • Juiced lemon (with pulp and grated peel), 1 lg

Instructions

Step 1

In a bowl, mix the flour, baking soda, and baking powder. Mix butter, sugar, lemon juice, lemon pulp, and grated lemon peel, then add dry ingredients. Mix until well combined.

Step 2

Divide into two logs of 10 inches each, cover with plastic wrap, and freeze for at least an hour. You can make these ahead and freeze them for weeks.

Step 3

Preheat the oven to 400 degrees. Prepare the dough by removing it from the freezer, unwrapping it, and cutting it into 1/4-inch slices.

Step 4

Place on silicone baking mat and bake for 7-9 minutes. Once baked, remove from oven and let cool on a rack.

Step 5

Combine powdered sugar, lemon juice, pulp, and shredded peel in a shallow bowl or plate.

Step 6
