Ingredients

  • Rigatoni pasta, 1 lb
  • Extra virgin olive oil, 2 tablespoons
  • Button mushrooms, 10 oz
  • Balsamic vinegar, 3 tablespoons
  • Yellow onion (chopped), 1 
  • Garlic (pureed), 2 teaspoons
  • Salt and pepper (to taste)
  • Chicken breast, 1 lb
  • Chicken stock, 1 ⁄2 quart
  • Marsala wine, 2 -4 oz
  • White wine, 2 oz
  • Heavy cream, 1 ⁄2 quart 
  • Fresh basil (chopped), 1 tablespoon
  • Parmesan cheese (grated), 2 tablespoons
  • Garlic butter, 2 oz
  • Parmesan cheese (for garnish)
  • Fresh parsley (chopped)

Instructions

Step 1

Heat the oil in the pan. Saute onions until caramelized. Sauté the mushrooms in balsamic vinegar.

Step 2

Combine the onions with the mushrooms. Sprinkle salt and pepper over the mixture. Stir in the garlic, chicken stock, Marsala, and white wine. Cook until half reduced.

Step 3

Stir in cream and bring to a boil. Reduce heat and simmer to remove any impurities.

Step 4

Cook rigatoni until they are al dente. Stir drained rigatoni into chicken mixture in pan, then top with the basil-parsley mix, garlic butter, parmesan cheese, and salt and pepper.

Step 5

For more flavour, add more Marsala. Serve in a pasta bowl topped with parmesan shavings and chopped parsley.
