- Chicken (cooked and diced), 1 pound
- Pork or beef (cooked and shredded), 1 pound
- Creamy corn, 3 cans
- Vegetable oil, 2 tablespoons
- Potatoes (diced and cooked), 2 1/2 cups
- Onion (minced), Two tablespoons
- Garlic cloves (minced), 2
- Vegetable stock, 1 1/2 cups
- Ketchup, 1 1/2 cups
- Barbecue sauce, ½ cup
- 7 bacon strips
- Worcestershire sauce, 2 tablespoons
- Kosher salt, 1/2 teaspoon
- Freshly ground black pepper. 1/2 teaspoon
- Hot sauce, 1 teaspoon
Instructions
Step 1
Cook the stew in a large stockpot large enough to hold the entire batch. Pour the oil into a pan, cook the bacon, and remove the bacon.
Step 2
Stir in onions and garlic and sauté for a few minutes. Add meat when onions are tender.
Step 3
Cook the meat until it browns. Pour in the vegetable stock.
Step 4
Combine the canned corn, potatoes, bacon, ketchup, Worcestershire sauce, barbecue sauce, salt, and pepper. Stir in the cooked bacon strips.
Step 5
Allow the mixture to simmer for approximately 30 minutes. When the mixture is simmering, lower the heat.
Step 6
Once the stew has thickened, serve it with warm bread.
