Ingredients

  • Olive oil, 1 tablespoon
  • Onions (chopped), 1 cup   
  • Celery (chopped), 2 stalks
  • Ground pork, 1 ½ pound
  • Ground beef, 1 ½ pound   
  • Whole cooked chicken (deboned and shredded), 3 pounds   
  • Whole peeled tomatoes (chopped), 3 (14.5 oz) cans
  • Ketchup, 1 cup 
  • Barbeque sauce (hickory flavoured), ½ cup 
  • Salt and pepper (to taste)   
  • Hot sauce (to taste)
  • Green bell pepper, 1   
  • Cream-style corn, 3 cans (14.75 oz) 
  • Okra (optional)

Instructions

Step 1

Cook the onions and celery in oil until soft in a large skillet. 

Step 2

Cook the pork and beef until they are evenly browned. Do not drain.

Step 3

Cook the pork and beef mixture over low heat in a large stockpot. Stir in the shredded chicken, ketchup, tomato liquid, and barbecue sauce.

Step 4

Stir in salt, pepper, and hot sauce to taste. Stir in an entire green pepper.

Step 5

Stir occasionally for 2 hours or until thickened. Combine the stew mixture with cream-style corn. 

Step 6

Let simmer for 1 hour or until desired consistency is achieved.

Step 7

Toss away the green pepper or chop it up if you prefer. Enjoy!
