How to Make Queso Fresco Quesadilla?
For making this, there are 3 sets of steps. First, you have to pile up the layers of cheese, tomatoes, and scallions on the tortillas. Sandwich them. Secondly, gently fry the Quesadillas. Then cut them into equal pieces.
Thirdly, make the tomatillo sauce for serving the Queso Fresco Quesadilla. It will be done by first broiling the tomatillos.
Then blend them with Lime juice, Minced scallions, Chopped jalapeno, cilantro leaves, Salt, Sugar, roasted red peppers, and roasted garlic cloves until a puree is obtained. Serve it with quesadillas. The total making process for this recipe is 35 minutes.

For Tortillas:
- Flour tortillas = 4
- Clarified butter
- Thinly sliced Roma tomatoes = 2
- Chopped cilantro leaves = ½ bunch
- Crumbled queso fresco cheese = 2 cups
- Julienned scallions = 6
For Tomatillo Salsa:
- Husked tomatillos = 10
- Lime juice = 1 oz
- Minced scallions = 8
- Chopped jalapeno =1
- Finely chopped cilantro leaves = ½ bunch
- Salt = ½ tsp
- Sugar = ½ tsp
- Finely chopped roasted red peppers = 1-½ tbsp
- Finely chopped roasted garlic cloves = 1-½ tbsp
Instructions for Making Queso Fresco Quesadilla
Follow this procedure to make Queso Fresco Quesadilla:
Step 1
On a working surface, lay 2 tortillas. Spread the cheese so that it is evenly distributed between both tortillas.
Step 2
Add the slices of Roma tomatoes to the cheese layer. Then add cilantro and scallions.
Step 3
On these ingredients layered down on the tortillas, lay down the remaining tortillas so that the ingredients are sandwiched between the tortillas.
Step 4
Take a large saute pan. Coat its inside with clarified butter. Then place a quesadilla in the pan. Brush it with clarified butter.
Step 5
Cook both sides by flipping when one side is done. Bring out a golden brown color. Take it out and cut it into 6 equal pieces. Repeat the same with the other one.
Step 6
Make the tomatillo sauce by preheating the broiler and then broiling them until they start to blacken.
Step 7
Let them cool and then add in a blender. Add all the remaining ingredients along with the tomatillos. Blend and puree them. Serve with Quesadillas. Enjoy!
