- Cold soda water, 1 cup
- Panko breadcrumbs
- Vegitable oil

Step 1
Slice the cheesecake into smaller portions. To make cutting the cheesecake easier, place the cheesecake in the freezer for a while to harden it up.
Step 2
Heat oil in a deep-fryer or a deep pot to 340 degrees Fahrenheit.
Step 3
To make the tempura mix, combine the wheat flour, rice flour, corn starch, baking powder, and salt in a container. Combine with a fork. Pour in the cold soda water and egg. Using a fork, combine the batter to make it lumpy.
Step 4
Test the temperature of the oil by dropping a tiny bit of tempura batter into the pot.
Step 5
Once the oil has reached the right temperature, dip the cheesecake pieces into the batter. If you are using panko breadcrumbs, then dip into them and carefully place in the oil.

Fry for approximately 5 to 7 minutes. To keep the batter cold between batches of frying, store it in the freezer between batches. Colder batter will result in crispier cheesecake bites.
