When they’re done, they’ll be just as crispy as when they were first cooked. You can do this in a convection oven as well. - Large Shrimp (peeled and deveined) , 1lb
- All-Purpose Flour, 1 ½ Cups
- Cornstarch, ¾ Cup
- Baking Powder, 1 ½ Tablespoon
- Sea Salt, ½ Teaspoon
- Ginger Ale, 1 (12oz) Can
- Peanut Oil (for frying)
For Boom Boom Sauce
- Mayonnaise, ⅓ Cup
- Sweet Chili Sauce, ¼ Cup
- Peanut Butter, 1 Teaspoon
- Sriracha Sauce, 4-6 Drops
- Salt , ¼ Teaspoon
- Pepper , ¼ Teaspoon
Step By Step Instruction Boom Boom Shrimp
Step 1
To heat up the peanut oil, place a large pot on the stove. To make the dough, combine the flour, cornstarch, baking powder, and salt in a large bowl. Whisk together well.
Step 2
Once the oil reaches 330°F, add the ginger ale with flour and mix well. Whip until smooth.
Step 3
Dip the shrimp one at a time in the batter, working quickly while taking care not to burn your fingers. Work in batches of 8-10.
Step 4
Drain immediately on paper towels after cooking for 3 minutes. Keep doing this until all shrimp have been cooked.
Step 5
Mix the mayonnaise, sweet chilli sauce, peanut butter, sriracha sauce, salt, and pepper together in a small bowl. Add it to the shrimp as a dipping bowl or spoon it over the shrimp.
Recipe Notes
When you cook more than 8-10 shrimp at once you will have a problem with the earlier shrimp being overcooked. This will make the shrimp cook evenly.
I prefer to hold the shrimp with my hands rather than using a fork or spoon to lower them into the grease since this keeps the batter on the shrimp better.
If you like your sauce spicier, just add a bit more sriracha.
