  • Peanut oil, 6 cups
  • 4 russet potatoes (washed and dried)
  • Salt

Step 1

Heat 2 inches of oil over medium-high to 320 degrees F. Attach a deep-frying thermometer to the side of a large heavy pot or Dutch oven.

Step 2

Pour cold water into a large bowl. Slice potatoes while the oil is heating. Slice each potato half an inch thick using a mandoline fitted with a waffle or crinkle attachment, rotating the potato 90 degrees after each slice to create the waffle pattern. 

Step 3

After cutting, place slices in water. Use cold water to rinse potato slices of excess starch. Dry potatoes thoroughly with paper towels.

Step 4

Prepare two baking sheets by lining them with dry paper towels. Fry the potatoes in batches for about 5 minutes until they are still pale and starting to soften. Place the fried potatoes on cookie sheets lined with a paper towel.

Step 5

Re-fry potatoes over high heat for 2 to 3 minutes until they are crisp and golden brown. Put potatoes on baking sheets lined with paper towels. Sprinkle with salt. Serve immediately.
