How To Make Smoked Watermelon Ham

Ingredients

For the Smoke Watermelon:

  • Large watermelon (seedless), 1 Piece
  • Kosher salt, ½ cup
  • Coconut sugar, 3 tablespoon
  • Chili powder, 1 tablespoon
  • Smoked paprika, 1 tablespoon
  • Freshly ground black pepper, 1-½ teaspoon
  • Garlic powder, 2 teaspoon
  • Onion powder, 2 teaspoon
  • Ground cloves, ½ teaspoon
  • Hickory chips (soaked in cold water for 1 hour), 3 cups
  • Orange (for garnish)

For the Chipotle And Honey Glaze:

  • Canola oil, 2 teaspoon
  • Garlic (minced), 2 teaspoon
  • Fresh ginger (peeled and minced), 2 teaspoon
  • Coconut sugar, ½ cup
  • Raw agave, ½ cup
  • Fresh orange juice, ½ cup
  • Dijon mustard, 2 teaspoon
  • Pureed chipotle in adobo, 1 tablespoon
  • Kosher salt, 1 teaspoon
  • Worcestershire sauce, ½ teaspoon

Instructions

For the Smoke Watermelon:

Step 1

Slice the watermelon ends off carefully. When you turn the watermelon onto its flat side, carefully cut off the rind, trying to leave a minimal amount of flesh. Get rid of the rind.

Step 2

On a cutting board, lay out the watermelon lengthwise. Set the largest surface area of the watermelon face up. Using a knife, cut 1-inch deep diagonal slits on the top of the watermelon to create a cross-hatch pattern.

Step 3

Combine the salt, coconut sugar, onion powder, chili powder, paprika, garlic powder, pepper, and cloves in a medium bowl.

Step 4

Rub the spice mixture over the watermelon, being careful not to tear it when you do so. Make sure any spice mixture that gets in between the cross-hatch cuts gets rubbed in.

Step 5

Preheat the oven to 450 degrees Fahrenheit. Lay a wire rack over a rimmed baking sheet. Transfer the watermelon cross-hatch side up on the rack and refrigerate, uncovered, for at least 12 hours.

Step 6

Spread the hickory chips and the reserved soaking liquid evenly over the bottom of a roasting pan. Drain all but 2 tablespoons of the liquid. Place the roasting rack on top.

Step 7

Place the watermelon on the roasting rack, cross-hatch side up. Use heavy-duty foil to cover tightly. Bake the watermelon for about 30 minutes.

Step 8

Turn down the oven temperature to 250°F. Bake the watermelon for 3 hours, then remove the foil and roast for another 3 hours.

For the Chipotle And Honey Glaze:

Step 1

In a large skillet, heat the canola oil over medium-high heat. Add the garlic and ginger when the oil is shimmering and cook, stirring frequently, for 1 to 2 minutes, or until light golden brown in color and very fragrant.

Step 2

Pour in the coconut sugar, orange juice, honey, mustard, salt, chipotle, and Worcestershire sauce and stir continuously until the mixture is evenly combined.

Step 3

Reduce the heat to medium and bring to a simmer. Stirring often, cook for another 10 to 12 minutes or until reduced by half. Take the watermelon out of the oven and turn the broiler on high after 6 hours.

Step 4

Place the rack on a baking sheet after carefully removing it from the roasting pan. Discard the hickory chips and excess liquid from the pan. Place the watermelon rack back in the roasting pan.

Step 5

Over the top of the watermelon, brush 1/4 cup of the glaze. Rotate the pan as needed to ensure that the glaze has caramelized evenly.

Step 6

Transfer the watermelon to a large serving platter and top with sliced oranges, rosemary or thyme sprigs, using long metal spatulas.

Step 7

Add another 1/4 cup of the glaze to the warm watermelon. Cut the watermelon into slices and serve it with the remaining glaze. Have fun!
