  • Bacon (sliced), 1⁄2 pound
  • 6 garlic cloves (minced) 
  • Chorizo sausage (thinly sliced), 10 oz
  • Flank steaks (cut into 1-inch chunks), 1 1⁄2 pounds
  • 1 medium white onion (diced)
  • 2 medium potatoes (diced)
  • 3 Roma tomatoes (diced)
  • 3 chipotles bell peppers (minced)
  • Negra Modelo beer, 12 ounces
  • Beef broth (low sodium), 1 cup
  • Worcestershire sauce, 5 tablespoons 
  • Oregano, 1 tablespoon
  • Cumin, 1⁄2 tablespoon
  • Pepper, 1 1⁄2 teaspoons
  • Salt (to taste)
  • 6 corn tortillas


Step 1

Heat a large skillet over medium heat. Cook the bacon until it is crispy and brown. Stir in the garlic and chorizo and simmer for a few minutes.

Step 2

Bring the heat up slightly, move the chorizo mixture to the side of the skillet, and add the beef to the centre.

Step 3

Cook until nicely browned and seared in places. To help the meat brown, you may need to add a touch of oil.

Step 4

Add the potatoes, onions, chipotles, and tomatoes. Sprinkle with salt and pepper. Stir in the beef broth and beer until well combined.

Step 5

Reduce heat slightly after it reaches a boil and adds Worcestershire sauce, cumin, pepper, oregano and salt.

Step 6

Cover and continue to cook until the liquid is reduced and thickened. Add the cilantro just before the end of the cooking process.

Step 7

Garnish with cilantro and serve with corn tortillas and Pico de Gallo. You can also serve with Mexican red rice or refried beans.
