Ingredients

  • Dates (chopped), 1-1/2 cups
  • Hot water, 1-1/2 cups
  • Butter, 3 tablespoons
  • Flour, 2-¼ cups
  • Sugar, 1-1/2 cups
  • Walnuts (chopped), ¾ cup
  • Baking soda, 1-½ teaspoon
  • Salt, 1-½ teaspoon
  • 2 eggs
  • Vanilla extract, 1-½ teaspoon

Instructions

Step 1

Combine the dates, water, and butter in a medium bowl and set aside for 5 minutes. Do not let the mixture get soggy. 

Step 2

In another large bowl, combine flour, sugar, walnuts, baking soda, and salt. Add the eggs, vanilla, and date mixture. It is important to make sure that the date mixture is well moistened and able to be broken down. Whisk and combine well until smooth.

Step 3

Prepare two 8-inch baking dishes with the batter. Make sure they are loaf-shaped. Prepare the baking dishes by greasing them. 

Step 4

Put them in the oven at 375°F for 45-50 minutes. Test the bread by poking it in the middle with a finger to see if it comes out clean when the batter is fully cooked. 

Step 5

Place on wire racks and allow to cool for 10 minutes. Cut into even pieces. Enjoy!
