- 1.5 lbs elbow macaroni
- 2.5 cans Chicken drained, (12.5 oz each)
- 1.5 lbs Cheddar cheese
- 3/4 lbs Pepper Jack cheese
- 8 oz Cream cheese
- 3/4 cups Butter divided
- 1 large onions finely chopped
- 3 stalks celery finely chopped
- 2 tsp Garlic minced
- 3/4 cups Buffalo wing style hot sauce
- 3.5 tbsp Flour
- 1 tbsp Dry mustard
- 3.75 cups Half & half
- 1.5 cups Sour cream
- 6 slices bread 1/2 inch cubes
- 3/4 cups Blue cheese crumbled
Instructions
Step 1
Preheat the oven to 350 degrees Fahrenheit. Prepare three 13-inch baking pans by spraying them with nonstick cooking spray.
Step 2
In salted water, boil macaroni for 7 to 8 minutes. Drain and rinse under cold water. Place aside.
Step 3
Add 6 tablespoons of butter to a large skillet and melt. When the butter is melted, add the onion and celery and cook for five minutes.
Step 4
Add the garlic and chicken to the pan and cook for 2 minutes. Add the 1 cup hot sauce and cook for another minute.
Step 5
In a large saucepan, melt 10 tbsp of butter and add flour and dry mustard. Mix well. Pour in half & half and the rest of the hot sauce. Whisk until the sauce thickens.
Step 6
Add the cheddar cheese, cream cheese, and pepper jack cheese. Combine well. Add the sour cream and stir well.
Step 7
Mix macaroni with chicken mixture and cheese sauce. Combine well and spread in prepared baking pans.

In a bowl, arrange the bread cubes. Pour the remaining 1/2 cup butter over the bread cubes to coat well.
