  • Olive Oil, ½ cup
  • 2 Beers (any Choice)
  • Peppercorns, 4
  • Dill (Chopped), ½ tablespoon
  • Basil (Chopped), ½ tablespoon
  • 5 Carrots (Diced into Bite-Sized Pieces)
  • 1 Large Onion (Cut into Large Chunks)
  • 4 Gold Potatoes (Diced into Bite-Sized Pieces)

Step 1

Prepare the roast by rinsing and drying it before placing it in a bowl that is large enough to accommodate it.

Step 2

Spread olive oil over it, then pour the beer over it. Let it marinate for an hour. If you marinate for longer, you’ll have more flavor!

Step 3

Set the oven to 320 degrees Fahrenheit. Make four slits in the meat and insert a peppercorn into each one. Next, rub the meat with dill and basil.

Step 4

Place the carrots, onion, and potato in the bottom of a roasting pan or Dutch oven. Over the vegetables, arrange the meat and drizzle the marinade liquids over it.

Step 5

Cover and cook the meat for about 4 hours on a slow cooker, or until a meat thermometer inserted in its center registers the desired temperature.

Step 6

Remove the meat from the oven and let it rest for 10 minutes. This is the perfect opportunity to prepare a delicious gravy from all those wonderful sauces from the bottom of the pan.
