Ingredients 

  • Pecans, 1/2 cup
  • Heavy cream, 3/4 cup  
  • Sour cream, 1/3 cup  
  • MINI marshmallows, 3 cups   
  • Pineapple (diced), 1 1/2 cups 
  • Sweetened coconut (shredded), 1 cup 
  • Mandarin oranges in light syrup, drained well, 1 can (11 oz)
  • Maraschino cherries stems removed and halved, One jar (10 oz)

Instructions

Step 1

Place the rack in the center of the oven and set the temperature to 350 degrees F.

Step 2

Place the pecans on a small baking sheet and bake for about 6 to 8 minutes. Stir halfway through.

Step 3

Transfer the pecans to a medium bowl to cool completely.

Whip the heavy cream with an electric mixer until stiff peaks form.

Stir in the sour cream by hand. Whip until combined.

Step 6

Combine the marshmallows, pineapple, and coconut. Gently fold in the Mandarin orange.

Cover with plastic wrap and place in the refrigerator for at least 2 hours or overnight.
