Ingredients

  • Medium ripe bananas, 3 to 4
  • All-purpose flour, 3 tablespoons
  • Sugar, 3/4 cup
  • Large eggs, 4  
  • Salt, 1 teaspoon
  • Whole milk, 2 cups
  • Vanilla extract, 1/2 teaspoon 
  • Vanilla wafers, 30 to 40  

Instructions

Step 1

Preheat the oven to 425 degrees Fahrenheit. Separate the yolks and whites of 3 eggs. Reserve the whites. 

Step 2

Add the remaining whole egg to the yolks. In a saucepan, mix together 1/2 cup sugar, flour, and 1/2 teaspoon salt. 

Step 3

Pour in the milk, then add the whole egg and three yolks. Stir the mixture often as it cooks, uncovered, for about 10 minutes.

Step 4

Remove the mixture from the heat and add the vanilla. Combine well.

Step 5

Spread the pudding thinly in a 1-1/2-quart casserole dish. Lay a layer of vanilla wafers on top of the pudding. 

Step 6

Slice the bananas thinly, about 1/8 inch thick, and lay them on top of the wafers. 

Step 7

Spread one-third of the remaining pudding on top of the bananas, and then layer the wafers, bananas, and pudding.

Step 8

Beat the egg whites with a pinch of salt until stiff, then make the meringue.

Step 9

Mix until the whites do not slide out when the mixing bowl is tilted as you slowly add the remaining 1/4 cup sugar.

Step 10

Use a spatula to raise the meringue a bit as you spread it over the pudding. Put the meringue in the oven for five minutes or until it is lightly browned. Serve immediately.
