Ingredients

  • Chuck roast, 2–3 pounds
  • Medium Barley, 2/3 cup
  • Beef broth (low sodium), 6 cups
  • Vegetable oil, 2 tablespoons
  • Carrots (sliced in thin rounds), 2 
  • Celery (thinly sliced), 2 stalks
  • Medium onion (finely chopped), 1 
  • Garlic cloves (crushed), 3 
  • Parsley (dried), 1 tablespoon
  • Oregano (dried), 1 teaspoon
  • Ground thyme, 1/4 teaspoon
  • Tomatoes (diced ), 1 can (14.5 ounces)
  • Bay leaf, 1 
  • Corn (drained), 1 can (14.5 ounces)

Instructions

Step 1

In a large pot or Dutch oven, heat vegetable oil over medium heat. Add the beef and sear. Transfer the beef to a plate.

Step 2

Cook the carrots, onion, and celery for 4-5 minutes. Add the garlic, parsley, oregano, and thyme after stirring constantly for one minute. 

Step 3

Add the beef, bay leaf, and diced tomatoes to the same pot. Let the beef simmer until fork-tender for 1 1/2 hours.

Step 4

Add corn and barley. Cover with a lid and let simmer for 30 minutes. Remove the lid and continue to simmer for 15 minutes.

Step 5

Remove the beef from the pot and trim it of any gristle or fat. Prepare the barley soup and begin chopping the beef meat into small or medium pieces.
