Ingredients

  • Ground chuck/Beef, 2 pounds
  • Large onion (diced), 1
  • Celery (diced), 2 stalks
  • Garlic cloves (minced), 3
  • Whole tomatoes, 1 can (approximately 14.5 oz)
  • Beef stock or beef broth, 3 cups
  • Whole yellow bell pepper (seeded and diced), 1
  • Whole red bell pepper (seeded and diced), 1
  • Whole green bell pepper (seeded and diced), 1
  • Whole carrots (peeled and sliced), 4
  • Whole red potatoes (cut into chunks), 5
  • Tomato paste, 3 tablespoon
  • Kosher salt, 1/2 tablespoon
  • Black pepper, 1/2 tablespoon
  • Parsley flakes (dried), 2 tablespoon
  • Ground oregano, 1/2 tablespoon
  • Cayenne pepper, 1/4 tablespoon

Instructions

Step 1

Cook the meat, onion, celery, and garlic in a large pot over medium-high heat for about 3 to 5 minutes. Turn off the heat and let it cool.

Step 2

After it has cooled, drain off as much fat as you can. Add the remaining ingredients to the pot and return to the heat. Mix all ingredients together before bringing to a boil.

Step 3

Cover the pot and continue to cook for 15-20 more minutes, until the potatoes are tender but not too tender. Use a fork to test the potatoes.

Step 4

It is important to cook the soup until it reaches the desired thickness. To make beef vegetable soup more soupy, add 1 to 2 cups more broth OR hot water and heat it thoroughly.

Step 5

If the seasonings need to be adjusted, you may need to add more salt. This soup is best served with crusty bread and any side you desire.
