  • Hot peppers, 1 pound
  • Garlic (peeled), 1 head
  • Vinegar, 1 cup 
  • Salt, 1 tablespoon
  • Mason Jars with lids

Step By Step Instructions To Make Trinidad Scorpion Hot Sauce

Remove all stems from the peppers. Be sure to wear gloves when washing the peppers. 

Step 2

Grind peppers and a few garlic cloves together in batches in a food processor or blender. Pulse in some vinegar.

Step 3

Stir this mixture into a pot and repeat with the remaining peppers.

Step 4

Place the pot on the stove, add salt, and cook on medium heat.

Step 5

Prepare a second pot by filling it with water and bringing it to a boil. Add all the lids from jars to the hot water.

Step 6

Turn off the heat as soon as you see the pepper sauce beginning to bubble, and immediately pour the hot sauce into jars.

Step 7

Close the jars with lids, but do not overtighten. The hot air will cause the lid to seal properly when it is let in.
