  • 2 cups rice (cooked)
  • 1 cup yellow cornmeal
  • 1/2 cup onion (chopped)
  • 1 to 2 tablespoons jalapeno pepper (seeded and chopped)
  • 1 teaspoon salt
  • 1/2 teaspoon baking soda
  • 2 large eggs (room temperature)
  • 1 cup 2% milk
  • 1/4 cup canola oil
  • 1 (16-1/2 ounces) can cream-style corn
  • 3 cups cheddar cheese (shredded)
  • Additional cornmeal

Step By Step Instructions To Make Cajun Cornbread

Step 1

Combine rice, cornmeal, onions, peppers, baking soda, and salt to a large bowl.

Step 2

Mix eggs, milk, and oil in a separate bowl. Add corn and mix well. Stir in rice mixture until blended. 

Step 3

Stir in cheese. Grease a 10-inch baking dish well. Add cornmeal to a skillet that can be used in the oven. Place batter in skillet.

Step 4

At 350°, bake for 45-50 minutes or until a toothpick inserted into the center of the bread comes out clean. Slice into wedges and serve warm. Enjoy!
