Ingredients
- Chuck roast, 2–3 pounds
- Medium Barley, 2/3 cup
- Beef broth (low sodium), 6 cups
- Vegetable oil, 2 tablespoons
- Carrots (sliced in thin rounds), 2
- Celery (thinly sliced), 2 stalks
- Medium onion (finely chopped), 1
- Garlic cloves (crushed), 3
- Parsley (dried), 1 tablespoon
- Oregano (dried), 1 teaspoon
- Ground thyme, 1/4 teaspoon
- Tomatoes (diced ), 1 can (14.5 ounces)
- Bay leaf, 1
- Corn (drained), 1 can (14.5 ounces)
Instructions
Step 1
In a large pot or Dutch oven, heat vegetable oil over medium heat. Add the beef and sear. Transfer the beef to a plate.
