For The Cake
- 2 pkg active dry yeast
- 1/4 cup warm water (100 degrees)
- 1 1/2 cup milk (scalded and cooled)
- 3/4 cup granulated sugar
- 1 teaspoon salt
- 1/2 cup butter
- 3 eggs
- 1 teaspoon pure vanilla extract
- 1 teaspoon ground cinnamon
- 1/4 teaspoon nutmeg (freshly grated)
- 1/2 cup raisins
- 6-7 cup all purpose flour
For The Streusel Topping
- 1/4 cup flour
- 1/2 cup granulated sugar
- 1/4 cup butter (cold)
- 1/2 teaspoon ground cinnamon
Step By Step Instructions To Make Polish Coffee Cake
Step 1
In warm water, dissolve 2 packages of dry yeast.
Step 2
Heat milk until it is scalding, then remove it from the heat. Add sugar, salt and butter to the milk. Blend well and let cool to lukewarm.
Step 3
Add eggs one at a time, mixing thoroughly after each addition. Combine yeast mixture, vanilla, cinnamon, and nutmeg. Add raisins and mix well.
Step 4
Add flour, a cup at a time, mixing well for about five minutes. The dough will be sticky and wet. Make sure the dough is covered and raised in a warm place until it has doubled in size.
Step 5
As the dough is rising, mix the ingredients for the streusel topping until crumbly.
