For The Filling 

  • olive oil, 1 tablespoon
  • ground turkey, 1.25 pounds
  • white button mushrooms (finely diced), 8 ounces
  • 1 medium white onion (peeled and diced)
  • 2 medium carrots (finely diced)
  • frozen peas, 1/2 cup
  • celery (finely diced), 2 stalks 
  • 4 garlic cloves (peeled and minced)
  • chicken, beef, or vegetable stock, 2 ½ cups
  • tomato paste, 2 tablespoons
  • Worcestershire sauce, 2 tablespoons
  • 2 bay leaves
  • all-purpose flour, 1/4 cup
  • 2 sprigs each fresh rosemary and thyme
  • Black truffle Salt & Black pepper

For The Mashed Potatoes 

  • Potatoes (Yukon golds or Russet), 3 pounds
  • Butter, 6 tablespoons
  • whole milk, 1/2 cup
  • Sour cream, 1/2 cup
  • Black truffle Salt & Black pepper

Step By Step Guide To Make Barefoot Contessa Shepherds pie

Step 1

Peel the potatoes and cut them into 1-inch cubes. Once you’re done, place them in a large pot of boiling salted water.

Step 2

Cover your potatoes and simmer for 10-12 minutes until they are tender. When the potatoes are tender, drain them in a colander and then return them to the pot.

Step 3

heat the milk and butter in a small saucepan until the butter is completely melted.

Step 4

When the batter is ready, break up the potatoes with a handheld mixer, then add the warm milk and butter mixture slowly to make the potatoes creamy.

Step 5

Stir in the sour cream and 2 teaspoons of black truffle salt and pepper. As soon as your mashed potatoes are ready, remove them from the heat.

Step 6

Heat the oil in a large sauté pan over medium-high heat. Add the meat of your choice, in our case ground turkey (or lamb or beef) and let it cook over medium heat until well browned, keeping in mind to crumble the meat as it cooks.

Step 7

With a wooden spoon, transfer the meat to a separate plate and set aside. If there is grease left in the sauté pan, keep it, and if there isn’t, add an extra tablespoon of oil to the pan.

Step 8

Add the onions and sauté them for about 5 minutes, stirring occasionally, then add the carrots, mushrooms, celery, and garlic, and continue to cook for another 5 to 7 minutes, stirring occasionally, until they are soft.

Step 9

Add the flour to the veggie mixture and mix until well combined, then let the mixture cook for a further minute, stirring continuously.

Step 10

Stir in half a cup of stock with a wooden spoon, scraping up any browned bits that are stuck to the bottom of the pan.

Step 11

Add the rest of the stock and stir in tomato paste, Worcestershire sauce, bay leaves, herb sprigs, and frozen peas until all the ingredients are combined, then let the mixture simmer until it reaches a simmer.

Step 12

reduce heat to medium-low and maintain a low simmer for another 5 minutes, stirring occasionally.

Step 13

When the cooking time is up, discard the herb sprigs and bay leaves, then stir in the cooked turkey, and at this point, season the mixture with Black Truffle and pepper as needed.

Step 14

Transfer the filling mixture to a 9 x 13-inch baking dish and spread it out evenly.

Step 15

Spread the mashed potatoes on top of the filling in an even layer as well.

Place the baking dish in the oven for about 20 minutes, until the potatoes are lightly golden and the filling has begun to bubble.
