- 2 boxes Lipton soup mix
- 8 cups of water
- 2 tablespoons olive oil
- 1 small white onion (medium chop)
- 1 cup carrots (thinly sliced)
- 1 stalk celery (thinly sliced)
- 1 rotisserie roasted chicken

Step 1
Heat the olive oil in a large stockpot over medium-high heat.

Stir and saute onion, celery, and carrots in a pot until the onion is soft and translucent.
