For The Taco Seasoning
- 1 ½ teaspoon chili powder
- ¾ teaspoon garlic powder
- ½ teaspoon salt
- ½ teaspoon onion powder
- 1 teaspoon ground cumin
- ½ teaspoon paprika (smoked)
- ¾ teaspoon oregano (dried)
- ⅛-1/4 teaspoon cayenne pepper (optional)
For The Tater Tot Casserole
- 2 ½ cups frozen tater tots
- 1 ½ tablespoon olive oil
- ½ large white or yellow onion (diced)
- 1 large sweet pepper (red, orange, or yellow), seeded and diced
- 1 pound ground turkey (preferably 90-93% lean)
- 1 cup salsa
- 1, 15 oz. can black beans or pinto beans (drained and rinsed)
- 2 cups reduced-fat shredded Mexican cheese blend
Toppings: sour cream, extra cheese, cilantro, black olives, shredded lettuce, tomatoes, etc.
Step By Step Instructions To Make Pioneer Woman Tater Tot Casserole
Step 1
Preheat the oven to 425 degrees Fahrenheit. Mix chili powder, onion powder, garlic powder, oregano, cumin, paprika, and cayenne pepper in a small bowl.
Step 2
Heat the olive oil in a 12-inch cast-iron skillet or other non-stick skillets. Cook until the oil sputters when flicked with water.
Step 3
Stir the onion and sweet pepper in the skillet for 4 minutes, or until the onions are translucent and the peppers are soft.
Step 4
Cook the ground turkey and seasonings with the onions and peppers for 4-5 minutes, stirring and breaking up the turkey as it cooks, until the meat is crisp and cooked through, and the mixture is fragrant.
Step 5
Mix the turkey mixture with the salsa and drained beans. Cook the ingredients for 5-7 minutes, stirring every 1-2 minutes, or until the liquid is absorbed and the mixture is thickened.
Step 6
Turn off the heat and remove the pan. In a cast-iron skillet, spread the cheese evenly over the turkey and then distribute the tater tots evenly.
Step 7
if using a non-stick or non-oven safe skillet. Pour the turkey into a greased 8 x 13 inch baking dish and top with cheese, Pipe the tater tots over the turkey and sprinkle with cheese.

Place the dish in the oven and Bake for about 22-25 minutes, or until the tater tots are crispy and the cheese is melted. Remove from the oven and serve hot with taco toppings of your choice. Enjoy!
